Smaller game hunters..
So I'm watching Andrew Zimmern on Bizarre Foods. He was down south and many dishes were hunters fair.
So who has utilized these common back-country foods.
Groundhog
Possum
Racoon
Beaver (including the tail)
Now bear in mind these foods were eaten in their entirety (meaning brains and all were consumed)
As with a couple favorites of mine Squirrel and Rabbit...but they also ate the brains, hearts and livers..I'm intriqued!
I've eaten Coon, Beaver and many othe unique things at "game" dinners but never cooked the off the wall stuff myself.
We used to save our deer heart and livers to eat at camp, something I intend to get back too.

If proper care is taken during the preparation I don't believe beaver can be topped.

out of everything you listed the only thing i havent ate is possum. i have ate all kinds of brain and heart. but the best is some good ole greasy BBQ racoon.
