Fing the sack, cut it open (if your broadhead didn't already do the job ), cut it free from the top, turn it upside down to drain .... ideally, put in bag if you have one, if not, it has a thick outer membrane on it and will be ok in backpack or leave it in the cavity of the deer ..... when you get home, rinse it well .... there bay be blood clots in the chambers......slice like bread and fry like tenderloin ....some peeps I know like to scrape or cut the outer membrane off ....

I have an awesome recipe for heart roast. I usually serve it is as a hors d'oeuvre at Thankgiving. Fortunately I killed 3 nice bucks in the last 3 years and got a nice heart every time. I rinse off the heart with water then place it in a zip lock bag and put it in a cooler.
My brother loves the heart. He pickles it. I always have disposable surgical gloves for cleaning the deer. When I'm done I cut the heart free and stretch a glove over it for transport.
