I always clean my deer as soon as poss. Aging of meat should be done in a controlled environment. Outside the temps change and the sun heats up the hide. Freezing temps stop the aging process. I also find it harder to clean a frozen deer.

If it doesn't get above 50 and below 25, I'll let it hang in the shade(N side of my home) for 2-3days skin on.

I let it hang until I can get to it. Ive cleaned a few each way, never can tell the difference.

Didn't some meat guru get on here last year explaining why it doesn't help venison to age as it does beef (something about the enzymes breaking down to tenderize beef aren't present in venison, i think anyway)? Obviously won't hurt it either, so no harm no foul for those that do.

I let it hang until I can clean it...only once has one hung for over 24 hours without me getting to it.

you are going to hear it either way. i personally cut mine up (when i can) right away. i have had some buck taste like their tarsal glands when they are in the rut. so we always at least skin it asap. then let it hand at most a day.
