Year Round Trophy Whitetails by Joe Brooks is a good read.

Not a book but you should invest in a subscription to Deer & Deer Hunting magazine. A lot of times they will mention books in there or have page ads where they sell them (old & new). I''' try and find some more info on scouting books, I have several at home but can't remember many specific titles right now.

like he said, D&DH has good articles about scouting (and everything else related to deer hunting for that matter)

I third that for D&DH, plus as Mr. Kisky said, "Experience is the best teacher." Read, read, and read. And then apply what you have read to your experiences.
