Those are some great diagrams GMMAT.
I have (attempted) turkey hunting for a few years with a bow and I know where not to hit them. The fat and meat on the chest makes it very deceptive. I havedressed a ton of the birdsand witnessed a few successful bow hunts. you do NOT want to shoot at the wing butt on a broadside turkey IMO. I think it is one of the biggest bow hunting miss-informations out there. It will take the bird, but only if you hit an approx. 1.5" circle unless you are shooting a really massive BH. If you are forward or low even an inch, you just lost the bird.
I think shoot them right above the 'drumstick' 2/3 of the way up the bodyas depicted in the above diagrams. You want to hit a point about 2" behind a line drawn between the two wing butts. This gives you about a 3" high by 4" long 'vital' area you will be in the center of. Thats the Liver, lungs, gizzard, heart, and major arteries and veins. Although this will not break the wing and prevent flyoffs 100% of the time, hit them with a large BH and the ones I have whitnessed do not go far at all.
