Default Big Game animal dimensions

Hi all,
As part of a project assigned, I have to determine relative thicknesses of some big game animals which include; elk, grizzly bear, Cape buffalo, eland, and whitetail deer. More specifically I would like to know the thickness of the skin/hide, shoulder blade bone, and overall thickness of these animals from shoulder to shoulder. I have searched the web with no avail so any information or places to look would be greatly appreciated for any of these animals.

Do you need exact numbers or just approximations? Most of the deciding factors such as age of animal or condtion (fat for winter) will skew those numbers.

If I get a deer or elk this year I'll let you know.
