Default Red Stag experience?

I was looking into future trips to New Zealand to hunt Red Stags. However, I have heard that it is all high fence area hunting which I would not enjoy. Can anyone give me their experiences/recommendations for hunting Red Stag? Is it better to stay in the States and hunt Elk?

I wanted to go on a different type of safari and I don't want to go to Africa just yet. Any information would be greatly appreciated. And pictures would be welcome too!!
