GG, the meat is taken from the jowls, abdomen, and tail. Some take the legs for stewing but I find that too tough (it’s already chewy). The meat is processed using a tenderizer machine. It’s a unique meat and it tastes like… well…., gator. I don’t think it has a particular taste I can compare it too. It isn’t gamey.
A 10 footer will yield approximately 50 lbs of meat and a 9 footer yields approximately 40 lbs.
