| take fillets and remove skin and the streak of red meat |

| sprinkle with old bay ,salt and pepper |

| place fillets over a med heat for about 2 to 4 min on each side |

| remove when it starts to flake |

| right at serving squeeze lemon over fish if desired |

| some people also sprinkle with malt vinager |
